Water kefir grains (WKG) create a carbonated lacto-fermented beverage from sugar water, fruit juice, or coconut water. Incredibly easy to make, water kefir makes a fantastic non-dairy alternative to milk kefir and can be flavored to make a range of delicious beverages or as an ingredient in many recipes.
Water Kefir Grains are live probiotics in the form of soft, jelly-like ‘grains’ from a cactus plant. When healthy and fed, these grains will continue to grow and multiply and produce an endless supply of water kefir, which is known in Mexico (where it originates) as Tibicos.
In the photos you can see more fun with water kefir, or tibicos. On the left is a plain fermentation about 2 days old. On the right is a jar that I strained the kefir grains from when it was 2 days old & then added most of a pint of unwashed raspberries, then let it sit for 2 more days. It made a slightly fizzy homemade raspberry soda that’s actually good for me, as well as refreshing!

Don’t worry, the sugar isn’t for you. The grains will metabolize the sugar during the fermentation process and the final kefir water will be very low in sugar.
