Simple Almond Milk at Home

Place 1 cup raw, whole almonds in a bowl with enough water to cover by 1 inch.  Soak overnight or up to 2 days.  The longer they soak, the creamier the milk will be.

Strain, and discard the soaking water, which now contains phytic acid, a naturally occurring substance in nuts which inhibits our ability to absorb nutrients. Nuts should be soft and squishy.

Place almonds and 2 cups water in blender or food processor.  Blend for 2 to 4 minutes, until nuts are ground very finely & liquid is white & opaque.

Line a fine mesh strainer with your opened nut milk bag, and place over a large glass measuring cup.

Pour the nut mixture through the bag & strainer.

Close the nut milk bag & squeeze to get as much liquid as you can.  It should be about 2 cups.

Sweeten with honey or agave to taste if you want.

You can use the leftover nut meal in hot cereal, muffins, or smoothies.

Keeps in the refrigerator in sealed jars for at least a few days.
